Yes, if the series portrayed her as somewhat of a fool. But it did not. She appeared surprised when the water started boiling in front of her. She was even more surprised when the drug dealer got his hand broken and was prevented from attacking.
If the hexenbiest wasn't in control, all Adalind had to do was tell Rosalee it came back. There was no reason to make up a nonsense story. For that matter, all Rosalee would have had to do was contradict her. I'm sure her books could back that up.
The other thing that really points to Adalind actually telling the truth (for once) is Rosalee herself. Rosalee never thanked Adalind for potentially saving her life. I think it's because she believed Adalind when Adalind told her the hexenbiest was in control.
So in the end, you either have two fools, or Adalind was telling the truth.
