Aside from having grimm powers, Nick is first and foremost a TV cop. It's an almost universal rule that TV cops are never shown having any other interests or abilities that indicate they could be anything other than cops. Unlike real life cops, when they quit being cops, TV cops almost always take some other path that inevitably results in action and danger (PIs, bodyguards, etc.). Because how much of an audience is a TV series about an ex cop who runs a landscaping business or a diner going to attract?
Marie took on being a librarian for Nick's sake. How many years would that take out of her life? Maybe six until Nick went off to college or on his own. Six years later, she would still have been young enough to go back to her Grimm ways because Nick was out of the picture. Just from the way the series portrays Nick, I don't think Grimms can just walk away from the life and settle down to normalsville. Like Nick said, "I like being a Grimm". There's no doubt in my mind, especially with a reaper hot on her trail, that Marie got right back into the life of a Grimm as soon as she was sure Nick was gone for good.
Aside from that, Grimms were supposedly a rarity. Trubel said she encountered some, but they weren't landscapers or diners. They were Grimms. Even Kelly couldn't stay away from it, even though she had a kidnapped baby to support.
