There was an immediate and spiritual connection between Diana and Kelly. The child instinctively knew Kelly loved her. It was made obvious that Kelly had a positive affect on Diana and loved her. That showed some evolution as a Grimm, imo. (And Aunt Marie being engaged to a wesen also showed that enlightenment, imo.) I have always cared about Adalind from the start. I know she desperately loved her baby and was a devoted mother. That doesn't change the fact that Diana's best chance for a normal childhood lie with Kelly when the other choices were the Royals and the group that actively opposed them and might have been tempted to use her a bargaining chip or worse yet, subject the child to the violence that would be associated with the Royals trying to get her.
