You act like this is some kind of fault on Juliette's part and it really shouldn't be. You yourself said that Juliette didn't understand Nick's world. Wouldn't she have to have enough confidence in him in order to believe he understands it?
The only bit of information that the audience was given was that Juliette knew that there might be side effects to the spell. Nick was also given this information, but that's not the only thing he knew. He was much also more familiar with this other world that Juliette was. She would naturally rely on his judgment because of what he knows.
Juliette could have repeated over and over and over again that Nick needed to be a grimm. But that statement only comes down to one thing. She believes Nick knows enough of the wesen world to make a difference as a grimm.
If Nick didn't want to become a grimm again, all he had to say to Juliette was that he wasn't going to go through with the spell. That's it. Juliette would have gone with the decision. She would have had to.
I get why Juliette lost confidence in Nick. She relied on him and in her eyes, he failed her.
The best way to frustrate a cyberbully is to ignore him.
