It's pretty clear that when Marty first returns from the past he's surprised as he discovers all the changes that have taken place, so he didn't suddenly acquire new memories of this new present. II and III are stitched onto their predecessors with no time elapsed between them, and there is never any point in any of them were Marty appears not to remember things that have happened to him before. So I think the implication is that it's always "original Marty," and when III ends he's still got some work to do learning how the world in general and his family and life in particular have been changed by his adventures in time.
BTW, if we want to discuss these movies in any greater detail than this, I'm going to have to take some time to rewatch them, as I haven't seen any of them in years.
