We had a large wesen-world parallel to ours, with several royal families, and God knows how many secret organizations and conflicts. And then we had a few surviving Grimms, considered the most feared of them all. Just think about it, how many police jobs could get Nick? Renard was certainly not the only captain with knowledge about the wesen-world. In season 6, Nick had both experience and contacts. All Nick had to do, was spreading the rumor he was available. But Nick had no interest in that. And honestly, neither did Renard when he calmed down. Nick solved cases he could hardly handle otherwise. Remember how important Renard considered Nick before he turned evil. And besides, with Adalind in love with Nick and Diana's loyalty to her mother, he probably realized life would be easier if Nick was happy.
I thought the wesen council also considered killing Nick. But that aside, there are some additional reasons I can think of why Nick would not hire on with HW.
First, I don't think he'd be appreciative of HW's kidnap potentials and then beat the crap out of their recruits program.
Secondly, I doubt he'd want to completely compartmentalize his current identity and looks for something different so that he could operate without being recognized.
Third, I can see Nick just being too tempted to find out exactly what happened to Juliette and disregarding his mission.
Fourth, and most important: Adalind wouldn't like him working so closely with his ex.
You can say a lot about Renard and his dastardly deeds but he never used brute force, amnesia tactics, or a complete overhaul to recruit Nick into being his Grimm.
The best way to frustrate a cyberbully is to ignore him.
