That's not taking it back. Nick still said it and didn't regret saying it. Saying Nick took it back is painting a picture of him going through the portal specifically because he told Adalind he loved her and decided that he shouldn't have done it.
You would also have to truly believe Nick never said it again. The words were just confirmation of what was already known.
Honestly, I'm one of the people that think Adalind is the one that said those words way too early but she was afraid that he wouldn't return from the Black Forest. Nick saying it when he did doesn't really affect how I saw their relationship one way or the other. He's the main character so him saying it in the penultimate episode was probably done for dramatic effect.
