The point being made was Trubel not having hallucinations. The things she was seeing were real. There weren't symptoms of anything else. That was everyone else telling Trubel she was crazy. Grown men like Hank and Wu believed they were crazy and still insisted on what they saw so imagine what it was like for an orphaned child.
Nick and Juliette may have been able to handle things differently with her but they couldn't stop her from being a Grimm. That's what she was and there was no changing that no matter what they did. She was constantly attacked growing up despite not knowing what a Grimm was and she was attacked at the wedding when she was only trying to get the cure to Nick and wasn't threatening anyone. Wesen are going to react to her and some will attack her no matter what she decides to do unless she wears sunglasses all of the time. And that only works if her reputation doesn't precede her or she decides not to act when she sees a wesen do something nefarious.
Rolek wasn't an active Grimm yet it still defined him in a way. He still had to carry on the legacy and his last words were to Nick rather than his son. Rolek spent his remaining time carrying out his Grimm duties while his son thought he was insane.
Grimms don't actually have many choices in the traditional sense. Nick only lost his powers because of a unique set of circumstances with Adalind. Trubel didn't really have that option. And as we've seen with Nick, Juliette, and even human characters like Hank and Wu, it's extremely difficult to choose to be ignorant of that world once you become aware of it.
