We have seen the results on Hexens with Humans and Hexens with Zauber and Hexens with other Wesens, as you have written above, but never with Grimms. Could be really different.
Adalind panicked about what Kelly was going to be and brought up how much she did not want Nick die. Since Kelly is of mixed background he could become Grimm at young age for males or become really different so Adalind did not want anything bad to happen to Nick. If Nick lives and still can make choices at the end he most want to maintain a connection to Adalind and baby Kelly. Nick is man who might want to change multiple times who is his girlfriend for the next 17 years but does not mean he would not want role in his son's life.
If G&K are killing/transforming or forcing to move Nick where Adalind and baby Kelly cannot be, Adalind will need help of Trubel or other members of the scooby team over the years with Kelly. G&K would likely show us if Adalind is likely to get that support. In my opinion any time jump is likely to include all the children not just Rosalee's.
Women characters do not have to be having sex with the lead to be important to the story.
