Trubel is an interesting character, there's no arguing that. I'm not so sure I would want to watch a story involving her and only her though, just as I wouldn't want to watch a story involving Nick and Nick alone. The chemistry comes from all of the characters adding their depth to the story.
No what I am saying is Grimm B would have their own environment, friends, maybe family, career, life. The general idea is the central premise of this show (Grimm/wesen) has almost endless potential. Nick, is just one thread of the concept.
Not that I am suggesting this, but as an example (using characters we know) Monroe and Truble could decide to open a counseling therapy business for wesen youth that are having difficulty coming to grips with what they are. That would put them endlessly into new situations. Now you could get rid of Monroe and Ttruble and substitute X for it in any location etc. The point is the concept does not have to live or die with this particular cast of characters. Face it Adrian Paul killed off the Highlander series not the fans. If they would have played that off smarter they could have given him more liberty to do other things while keeping the franchise alive.
And as mentioned there is much that can be done with Truble. Even though he would not want it, she is ripe to develop a thing for Nick based on her past. That could be fun/interesting/realistic if handled over many episodes and is subtle and builds. I could see her, at her age, misinterpreting things a bit, fueled by a desire to be with the one guy who has always treated her decently. Trying to make dinner for him, trying to pretty herself up, perhaps on night trying to offer herself to him...and then Nick having to handle her with kids gloves...as I said lots of potential there and a good reason for her to go away for a while and develop her own life...etc
