Later she mocks him for being a grimm, trying to find a solution to a problem he helped create. Her overall lack of understanding and acceptance of his grimm nature was like fuel to the fire of her bitterness for the change she experienced. He's a cop and later became a Grimm so by nature he's driven to help those in need using his skills. He saw Juliette's change as something he caused and something he had to fix. He could never accept Juliette as a hexenbiest, she wasn't born that way. Not accepting the hexenbiest didn't mean not loving her. In a way their roles had reversed, that's why he said he had to accept what she'd become just as she accepted him becoming a grimm but in truth, neither of them truly accepted the other even though they loved each other. She wanted a version of Nick (pre-grimm) and he was trying to hold on to the pre-hexenbiest Juliette and both versions no longer existed.

I think because Nick seeing, he felt guilty.
And too she wasn't born that way.

Nick lied about his ancestors while living with Juliette and once she learned the truth, Juliette chose to stick by her man instead of kicking him to the curb. Juliette CHOSE to be with Nick when she now knew how dangerous it was to be WITH a Grimm and that choice is on HER and no one else. Juliette clearly could not handle Nick's lifestyle after Adalind raped her man and she still could have kicked him to the curb, but no the special snowflake did not have the nerve to be on her own. Poor, Nick!
