After a recent rewatch of the entire show, I found i really enjoyed the character of Pilar. She always exuded this sense of knowing so much more than she was letting on, but not in a sinister way. More as a sage woman of the world with a lifetime of strange experiences tucked away in her head, and we were children a little too young to be told the entire truth. I'd really like an episode where Nick has to go to Pilar for advice rather than falling back on the tropes of Monroe, Rosalee or the trailer as the problem does not fall within the traditional remit of the Grimm world.
