I believe Juli-Hexenette was alive with all her set of human emotions until Trubel shot her with the crossbow. Up to that point, she was fully aware of what she was doing and how it would affect others. She intended to wreck the spice shop, murder Monroe and let them know she liked (enjoyed) all her violent tirades.
The writers said she (Juli-Hexenett) was dead. Many of us took them at their word. Now the writers want the viewers to accept Eve as some new killing machine that has a memory of now dead Juliette but no remembrance of any emotions. What??
It would have been better if Meisner took a frozen Juli-Hexenett carcass back to Nick for burial. So far no one has showed up in Portland asking about her. She died unloved, let Nick decide what to do with the carcass.
Then have HW cook up a potion that a selected citizen of Portland takes each week to become a super powered hero to save us from Black Claw. The hero of the week will be an actual Portland citizen selected by a lottery. They just need to re-film any of the Eve scenes. That is simple since she has no emotions and the hero can just read the lines from a teleprompter.
Problem solved! The witch is dead. The citizens of Portland have a shot at appearing on Grimm. Grimm has a new reality element that may improve ratings. Then Bitsie can easily find work since so many believe she is a great actress. That is win,win,win and win.
