For the life of me. I can not figure out what was in Nick's head when he pointed his gun at Juliette.
Nick just saw Juliette throw Rosalee and take Hanks gun. He then waits and when Juliette states "She likes being a hexenbiest" he pulls his gun and says "but we don't".
Pulling his gun was not a police training reflex reaction like with Hank. Nick's action was more like saying how dare you not do what I tell you.
From a position of respect if Juliette says she like being a hexenbiest, who is NIck to say otherwise. If Nick doesn't like her being a hexenbiest then leave her alone and move on. Juliette has already told Nick she likes what she is. So it was no surprise when she said it again. To demand her to change at gunpoint shows NIck has no respect for what Juliette wants. But from the beginning of the show it has always been they do what Nick says, what Nick thinks is best. I can not think of any time when Juliette was allowed to be the boss. That is the main difference I see in the new Juliette. She refuses to let anyone tell her what to do.
From a logic point, Nick pulling his gun was the worse choice he could have made. If nothing else he knew she could take it from him. Nick should have considered he pull his gun on her, with a wave of his hand she would throw him into a wall. For Nick to pull his gun like that shows he thinks it is a threat. Did anything in Nicks brain make him realize pointing his gun at Juliette would have no more effect than if it was a water gun. At the point of threatening Juliette all possibility of conversation has ended. If Nick was thinking because it was him Juliette would not attack. That would only confirm his lack of respect for Juliette. To use Juliette's trust to threaten her without consequence is something an abusive mate does.
If you want to make the argument that Nick only wanted to scare her. To make her stop destroying the shop. To say his police training teaches the threat of being shot makes people comply. Which in normal cases it does, unless the suspect is trying to commit suicide. But there is nothing normal about this situation. To make matters worse Nick's lack of judgement, his need to have people comply. Nick choice ended in his putting others in danger. It could have ended in him eating his gun.
