Your season by season summary of the Nick and Juliette relationship is accurate. The forum has discussed the "chemistry" of the relationship. IMO, the chemistry was strongest before the pilot where Nick started his Grimm journey. In 2.19 Juliette begins to remember Nick and the photo from the Christmas party was what made her recall that they were in love.

Recall also that Renard got Adalind pregnant, then arranged for Diana's abduction. Adalind retaliates with cat scratch coma. Then it is Renard's HexenMomma that cooks up the Prince Charming love potion.
The end result is severe sexual attraction issues for Juliette but for Renard, not Nick. Her memory gets convoluted. For a moment Juliette seems to be recovering and the memories and chemistry flow back, but HexenMomma's potion has poisoned her. Watch this clip:

When things begin to improve and the perfect couple start to click, the poison of Renard spoils it all.
Then in 4.17, Hibernaculum Juliette and Renard culminate the betrayal on Nick and the Good Ship Nickliette sinks to the ocean bottom.
