Here is what the writers said:
Q:
So… let’s get right to it: Is Juliette really dead?
A:
David Greenwalt: That’s a great question. Now, I think that’s a question that will be--
Jim Kouf: Hell yeah! We can only afford so many people in the fifth year.
I've seen showrunners try to be sneaky before, and trust me, this is Greenwalt and Kouf trying to be sneaky. I mean, what COULD they say? "Yes, we're bringing back Juliette, but shhhhh, it's a secret?"
If Juliette's dying along with his mom was to explain Nick’s perspective in season 5. There was no need to spend all that was needed to make Juliette a hexenbiest. In fact Juliette’s actions lessen the impact of Nick reason for revenge. Who is Nick going to seek revenge against? The Royals Kenneth and the King are dead. It was Adeline’s actions that caused Juliette to become a hexenbiest. We know he is not going to seek revenge on her. She is the mother of his child.
There was just so much build up to making a Juliette a hexenbiest. More build up than any other event on the show. Even the zombie episodes did not have as much build up.
What was the hexenbiest change purpose? It is like the keys all this build up so much revolving around the idea, only to be dropped. In season 5 they say they are going to complete the story of the keys.
Juliette is dead but it just seems so unfinished. The way it sits now the only reason for the change was to explain why she was killed. But that could have been handled the same as how his mother was killed.
It seemed the writers where going a different way when they started the hexenbiest storyline, but changed directions when the show was picked up for season 5. The way Juliette died seemed like an afterthought. This way the writers have a clean slate for what they do with the character. Plus they are writing the Nick character into the hole. All four season we have seen Nick grow, to become a better Grimm. So in season 5 we get to see him go all full on Grimm on the wesen world? So where do they go from there. We know they have to get to a place where he accepts his position of being alone and a Grimm. As his mother was alone, his aunt was alone so will Nick.
