Nick and Adalind found themselves attracted to each other even though they both probably preferred not to be. Adalind denied her feelings in the first half of season 5 and Nick did it for even longer. If it weren't for their tumultuous history, they may have announced their attraction sooner.
As for Grimms being being emotionally detached, I didn't see it as necessary in the show. Nick and Trubel certainly weren't and neither were Kelly and Marie as it turned out. Nick's emotions ended up being the key to saving the world after all. He was compromised at first but Trubel helped him to get to a point where those emotions worked for him rather than against him.
Hell, this is a very good answer and spot on observation. I think that's how most people saw it.
