I'm not expecting alot of people to agree with me on this post since the bauerschwein have been the bad guys in pretty much all of their debuts. Plus, I think most people sympathize with Blutbads giving that Monroe is one and a popular character, and everytime we see the blutbad-bauerschwein conflict, it's always the wolves being victimized by the pigs.
Now don't get me wrong, I adore Monroe to bits and Hap was so adorable that it was a shame that he got killed. Heck, i'll even say that Blutbads are my second favorite wesen, right behind Bauerschwein.
Okay, with that being said, I'll continue with the main point of this post.
So far, we've seen bauerschwein in only a handful of episodes, but in all their debutes, they've all been the bad guys.
In "Three Bad Wolves" Lt. Orson murdered two blutbads (though he redeemed himself in "Trial By Fire"). In "A Dish Best Served Cold", an entire restaurant staff, led by Chef Ostler, targeted random blutbads. And in "Chupacabra", "Wesenrein", and "Tribunal" Officer Acker was revealed to be part of the Secundum Naturae Ordinem Wesen, and helped kidnap Monroe and tried to throw the cops of the groups trail.
Most of you are probably rolling your eyes thinking 'She just pointed out reasons why they're bad guys. Why would she feel sorry for them?'
Well, here's my reasons.
Let's start with Lt. Orson.
In "Three Bad Wolves", he was the one responsible for the deaths of Angelina's brothers, one of which was Monroe's best friend. The reason for this was that Orson was trying to get even with Angelina, who two years prior, murdered his two brothers for fun. A real eye-for-an-eye deal.
Now i'm not saying that Orson was in the right for doing so, in fact there's the saying 'two wrongs don't make a right', and it's made worse that he targeted two blutbads that had nothing to do with the murder. Had he gone strickly after Angelina, then that may have been a different story, though I don't think her brothers would take it too well...
Anywhodles, in a way, I can somewhat see why he would act out the way he did. He mentions that he and his brothers never bothered anyone and were just trying to live their lives. Angelina was the one that struck first and killed Orson's brothers for sport, and going by the crime scene photos, it was very gruesome...I doubt she killed them quickly. Imagine how horrible it must have been for Orson to arrive at the house and see his two brothers literally torn apart. I have two younger sisters myself, and I can honestly say that if I saw the mutilated bodies of my sisters, I would be crushed and horrified.
Now imagine being a bauerschwein inside your brothers home and while everyone's taking crime photos and such, you catch scent of a blutbad. Now imagine the anger of knowing who or what killed your family, and the frustration of not being able to tell the human authorities. I'm sure Orson must have felt this as his brothers were brought out in pieces, in body bags. It must have been horrible to know that his brothers killer was still roaming around loose since justice couldn't be served. I'll bet in his frustration, he resorted to revenge, which ended in targeting the killers own family. The problem is that while this seems fair, it still isn't right. He went after two innocent blutbads, and in the end, murder is murder.
So though I agree that Orson should be in prison, I was glad that he was able to get back at Angelina and was able to even the score. (though i'm still sad that Hap was killed. Perhaps if Angelina's brothers were just as blood thirsty as her, his success would be sweet). What I hate though, is that Angelina was able to get away with it all. She got away with the murders and she got away for the attack and attempted murder of Orson.
This is where my momentary displeasure for Monroe takes place. Nick was keen on arresting both Orson and Angelina since both of them did commit murder. Though when Angelina gets away and Nick asks Monroe for help in finding her, Monroe dissuades him, insisting that he would never find her and to just let her go. Then to my surprise, Nick's just like "...okay". Really? In real life, cops wouldn't do that. They'd be like "Uh-uh, don't try to cover for her, you tell me where she might have gone!". So in a way, I wasn't too happy with Nick either. :/
Like I said, I adore Monroe, but him covering for Angelina was just....frustrating. She should have done to prison as well. Orson even points out in "Trial by Fire", that she should have been punished as well. He say's something along the lines "If I have to be in prison then so should she!" which is completly true. Then Monroe argues that Orson killed his (Monroe's) best friend, an innocent person, which is true, though to be fair, it all goes back to Angelina throwing the first punch...and technically, weren't Orson's brothers innocent people too?
Overall, Orson got the unfair deal. He got locked up while Angelina roamed for what? Two years? And then when she does reappear, she ends up getting killed off, which while it is a permanent punishment, she doesn't suffer long, yet Orson is still in prison.
A quick final note on Orson before moving on to Ostler: Despite everything that Orson has done, I still don't see him as a real blutbad killer...as in he didn't go out and kill random (besides Hap and Rolf) blutbads. True he did break into Monroe's house and hold him at gun point (really extreme and risky actions for a cop), but he made it clear that the gun was mostly for protection and that he didn't want to hurt Monroe as he wasn't part of the feud that he had going on with Angelina. He just wanted Monroe to relay his message. What I'm trying to say is, he didn't target stranger blutbads. He had his two targets set and that was the end of that. Not like Ostler.
On to Chef Ostler.
Like Orson, I really enjoyed this character, mostly because I like the actor that played him.

When Nick comfronts Ostler in the second half of the episode, we learn that Ostler, as well as everyone in his staff, has lost friends and family to blutbads.
Hearing this, it got me thinking about a couple of things. 1) There are more bauerschwein victims than I thought. And 2) I wonder who Ostler lost that drove him to come up with this plan.
During the episode, we learn that Ostler had been living in Europe prior to coming to Portland (giving that he trained in a couple of culinary schools located in France and Germany) and that he returned to America to open his restaurant. Now at first, I thought he was a fresh graduate student, however, the article that Nick and Hank read states something that he is an awaded chef and he seems to be well known. This means that he's been cooking for quite a while (which I guess is how he was able to open a restaurant so fast) and explains why he was so worried about his sous chefs ruining his reputation.
So...if he's been working in Europe and decided to come to the states out of no where, I have to wonder if he's lost a friend/family member that really hit him hard. I know he says that he's lost half his family during the past years, but I have to wonder who was it that drove him over the edge. Did he loose a wife? His last child perhaps? (I know we don't see a wedding ring on him or anything...i'm just theorizing) Someone very close had to have died for him to just say 'screw it, i'm going back to America, finding a posse of bauerschwein victims, and opening a restaurant to lure in victims and kill them in the most painful way'.
Like I said commiting murder or even helping to commit murder is never okay, especially if the victims are random innocents, but like Orson, I feel like the staff received the loosing end of the battles they've been in with blutbads. I'm going to assume they've been in the same situation as Orson, they know that the murderers of their friends and families were the wolves, but they couldn't tell human authorities since wesen have to be a secret. So I doubt justice was served in many of these cases.
Either way, it's incredibly sad on both ends of the feud. Innocent bauerschwein get killed and by stroke of bad luck, innocent blutbads get punished by serviving family members.

When I found out about this series, I thought i'd look up the Grimm wikia and try to familiarize myself on the characters a bit before going online and watching the episodes (I spoiled myself a few times, but I didn't mind). Right when I found out about Bauerschwein, I knew they would be my favorite species, though I was disappointed when I learned that they were the antagonists in their respected episodes. Then I found out about Officer Acker and saw him in his police uniform, and since the page was still under construction and not alot of info was posted about him, I didn't know he was a bad guy. I thought 'hey maybe this guy might be the first actual good bauerschwein.' Boy was I wrong.
Through that though, I wonder if he always felt hate to mix species relationship or if he was 'convinced' that it was wrong, aka, brainwashed.
I mean, obviously his sister doesn't share the same thoughts as him as she went to Monroe and Rosalee's wedding as Bud's friends ( who is not a bauerschwein) date. Plus, she seemed shocked that her brother would be a part of such a thing, "Jessie woudn't do something like that!".
Unless he's been secretly harboring these feelings or something.
My other theory is that these thoughts and hate was purposly implanted by Shaw and his other friends. For all we know, he could have meet some of the members and they convinced him of their beliefs. They recruited him in other words.
I don't know. I think Acker pretty much got himself locked up for helping this hate group, but if I knew more about his background or saw more of him (perhaps in future episodes...a jail escape perhaps) I can make a solid decision for him.
Orson, Ostler and his staff though...I would consider them tragic villains. They've all had a trubled past, but their actions are still not excusable. Still, I think bauerschwein really are the victims they are portrayed to be, and though they are latter the attackers, I still think they are played the loosing hand. I mean for blutbads and their familes/friends, justice is served, yet for the pigs, it seems their killers never face justice.
In all, I would love to see more bauerschwein in future episodes, and I hope there are a few new piggy characters in season 5...and perhaps maybe even the return of Orson or Ostler? Maybe even Acker. I get the feeling that some of the Secundum order members will make a jail break, or perhaps more members arrive to Portland and the gang will need Acker's help on getting more info on them (threaten his sister again, that'll get him to talk ).
