Offhand, I don't recall any instance described in the books where a grimm killed a wesen without a weapon, so it doesn't seem to me as if the books exaggerate wesen strength. In a lot of cases, the grimms even had to invent new weapons because nothing they had seemed to work.
In a great many cases, if the wesen Nick encounters aren't verrat or BC, the mere realization that they're facing a grimm has been enough to scare them into surrendering without a fight. So if anything, it's the grimms whose power has been exaggerated, by all those terrifying stories the wesen parents tell their children about grimms.
