If you replaced Adalind's cookies and the doppleganger potion with scopolamine or some other date rape drug, you probably wouldn't have any problem calling what she did rape or some other form of sexual assault. By today's real-world standards, every vampire who ever mesmerized and bit someone and every witch who ever used a love potion is a rapist or an accomplice to rape, but I can count the number of times I've seen that interpretation depicted on one hand.
Your point about suspension of disbelief is probably the best one made so far. I have seen it's a fantasy to explain away the more controversial topics quite often. It's usually overlooked that the use of magic is equivalent to drugs and in some cases even stronger.
In order to combat this, I have seen some shows or movies such as Sabrina the Teenage Witch movie where magic couldn't be used to make someone fall in love.

What happened to Nick was a whopper of Adalind.
Her appearance was Juliette's and Adalind acted like Juliette.
About Sansa,in real life, many women are raped by their husbands and beaten
Hank wouldn't've had sex with Adalind or even dated her because he was uncomfortable with the idea of dating or having sex with someone whose life he saved. That's why Adalind needed to use her magic cookies.
As for Sansa, what you say is true but plenty of viewers denied her being raped because she was raped by her husband in a medieval setting so they don't really see it as rape. They just see it as a husband taking advantage of his wife whom is his property. It's sad that people have that view since rape was always rape no matter the era. Some won't see it as rape as long as the authorities won't come and arrest the perpetrator.
