In reference to the number of keys being 7, that is a number that has always had some mystical significance attached to it. God rested on the 7th day, 7 deadly sins, 7 virtues, etc. According to the story line there were 7 knights who returned from the second crusade with something so important that they decided no one should have it, especially not the royal families.
The purpose of the 7 keys would be that no one person could access the hidden whatever. All 7 knights would have to get together and agree to open it. Or, if it is the 14 coins, then they could be stashed in 7 different locations and each key accesses a box containing 2 of them. Hmmm.
