I agree with you. Nick's guilt was in the way of a good relationship with Juliette/Eve.
Why IMO Nick accepted Adalind as a hexenbiest:
1) Adalind was born a hexenbiest.
2) Adalind was not as powerful a hexenbiest as Juliette.
3) Adalind never expected Nick to kiss her woged.
4) At first Adalind took the suppressant which allowed Nick to get to know her and when it wore off she really did not change.
5) Adalind was really not interested in being an active hexenbiest except when she had to for the family she had not even read all of her mom's books. Juliette/Eve wanted to learn more about being hexenbiest.
Women characters do not have to be having sex with the lead to be important to the story.
